This recipe is a variation on my basic baking-powder biscuits...amazing w/sausage gravy for brunch, or as a sweet/savory accompaniment to chicken or pork when served warm and drizzled with honey-butter. This is home-cooked comfort at its finest!
Baking Powder Biscuits
- 2 c. flour
- 1 tblsp. + 1 tsp. baking powder
- 1 tblsp. sugar
- 1 tsp. salt
- 1 tsp. dried sage (rubbed or crushed)
- 1 tsp. black pepper
- 1/2 tsp. dried thyme
- 1/2 c. shortening
- 3/4 c. milk
Combine dry ingredients, then cut in shortening until mixture resembles coarse crumbs. Add milk all at once and stir to combine. Turn out onto floured surface and knead lightly, then pat or roll dough out to 1/2" thickness. Using a biscuit cutter, cut into 12 circles (or in this case, hearts) and place on ungreased baking sheet. If you prefer to make "drop" biscuits, increase the milk to 1 c. , don't knead the dough, and just use a spoon to drop 12 biscuits on the baking sheet. Bake in HOT oven (425-450) 10-12 min. or until just starting to slightly brown. These biscuits are light and fluffy and packed with flavor.
